In 1977, he started alongside Maurice Bernachon who transmitted him his love of chocolate and a well done job. Creator of the cold emulsion, this technique revolutionized the world of sculpture modeling in chocolate. Elected”meilleur ouvrier de France” in 1993, he is incorruptible in the choice of raw materials and their transformation. Creator, composer and project manager in all his productions, the constant search for excellence and the transmission of experience remains his philosophy.
